Meet Besser farm: 40 hectares in Papua New Guinea’s Eastern Highlands, run by Sero Dan Bebes. Up here, the air is cooler, the soil is volcanic and the coffee cherries take their time to ripen, which is exactly what gives this lot its complexity. Blue Mountain and Typica varieties grow beneath native Casuarina trees, enjoying the shade. Brew it however you like, but if you want to see it at its best, pull it as an espresso.
